Coke-Cola BBQ Roast Beef

This Coca-Cola pot roast is delicious and easily pulled apart. Your slow cooker will perform all the work!
Few dishes are as reassuring as a slow-cooked pot roast. It’s one of those meals that fill the house with a delicious aroma as it cooks, allowing you to start enjoying it long before you take your first bite.

During the holidays, my mother would prepare a Coca-Cola pot roast, and I recall the aroma wafting into my bedroom. It was a clear indication that a special meal was imminent.

My mother’s pot roast preparation required an entire labor day and was reserved for special occasions. But with this slow cooker recipe, you can achieve the same tender meat and vegetables without spending all day in the kitchen. A slow cooker is ideal for low and slow cooking because it maintains an even temperature. You need not bother at all. Just a little effort in the morning will result in a memorable dinner!

Ingredient

• 3 to 4 lbs roast beef
• 1 can Coke-Cola Classic
• 1 (16 oz) catsup
• 1 pkg. onion soup mix
• Salt and pepper to taste

Directions

1. Cut up chunks of beef in slowcooker. Add rest of ingredients.
2. Cook on LOW 6 to 8 hours. Tear meat with a fork, put back in crockpot.
3. Cook until hot. Serve over hamburger buns.

Editor’s Tip: Mexican Coke differs in flavor from American Coke because it is made with cane sugar rather than high-fructose corn syrup. In addition, it is packaged in a glass bottle rather than plastic or metal.
