What to Consider When Purchasing a Pastry Brush
Bristles play a significant role in how well a pastry brush picks up and spreads liquids on baked goods. You want bristles that are malleable to ensure even coverage but not so flexible that they damage your delicate pastries. Stiffer bristles tend to tear paper-thin phyllo dough, while extremely soft bristles are difficult to control and may absorb an excessive amount of liquid. The majority of pastry brushes are made of four materials, each of which has a specific application in pastry preparation.
This natural bristle material is by far the most preferred by professional chefs. They readily absorb liquids and are supple enough to glaze any pastry smoothly while remaining dense sufficient to soak a cake in syrup. They work equally well with thick and viscous liquids and thin and runny liquids, and drippage is almost non-existent. The disadvantage of this material is that bristles may be shed over time, and the majority of them must be hand washed.
While nylon bristles provide the same flexibility as natural bristles without the risk of shedding, they do not hold liquid as well. While nylon is excellent for spreading thicker liquids such as glazes or barbecue sauces, it is stiffer than natural bristles, tearing delicate pastries. Choosing the appropriate tool for the job requires consideration of its size. Bristles less than 2 inches in length typically provide the best balance of coverage and versatility. While longer bristles enable access to all crevices on pastries, such as fruit tarts, they can be challenging to maneuver when a more delicate touch is required. While shorter bristles lack the swoosh factor of longer bristles and cover less area, they can aid in detailed work and are ideal for smaller pastries or doughs.
Along with bristle length, another critical factor to consider is the brush head’s density. With more bristles, it can capture more liquid, requiring fewer reloads.
The first step is to read the manufacturer’s instructions thoroughly. Beyond that, it becomes a matter of bristles selection.
Silicone models generally require a quick rinse to remove any lingering liquids before being placed in the dishwasher.
Natural fibers and the majority of nylon models require additional care. If you choose boar hair bristles, a quick soak in lemon juice and dish soap will dissolve any remaining liquid. Then, for maximum durability, hand wash and dry them.
Nylon requires slightly less labor. A quick wash of the hands in warm, soapy water should suffice. Brush bristles can become hardened or rancid if debris is left on them, so be sure to wash them after each use.
Again, this is model-dependent. When it’s time to replace a natural bristle brush, it’s easy to tell—if it’s shedding, it’s time. If your pastry brush continues to smell after washing, it’s time to replace it. Odors and stains can accumulate, and you do not want to impart them on your pastries.
While silicone and nylon are more durable, they can become stained or even melt if used repeatedly in high-heat situations. Examine the bristles for signs of degradation to determine when it’s time to replace the brush.
To avoid cross-contamination, you should first designate your brushes for the tasks you use them for before we even talk about their adaptability. At the same meeting, don’t coat your pie crust with egg wash and barbecue sauce simultaneously.
