Corn Pancakes

Flour, baking powder, corn meal, salt, granulated sugar, egg, whole milk and melted butter mixed together. Pancake batter poured onto hot, prepared grill and cooked until fluffy and golden brown.


  • 1-1/2 cups Flour
  • 4 teaspoons Baking Powder
  • 2/3 cup Corn Meal
  • 2/3 teaspoon Salt
  • 3 tablespoons Granulated Sugar
  • 1 Egg, beaten
  • 1-1/2 cups Milk
  • 2 tablespoons Butter, melted


  1. In a large mixing bowl, combine the flour, baking powder, corn meal, salt, sugar, egg, milk and butter.
  2. Beat with an electric mixer for 2 minutes.
  3. Pour 1/4 cup batter per pancake on a preheated griddle sprayed with non-stick cooking spray.
  4. Bake until the top forms tiny bubbles.
  5. Flip and cook to golden brown.
  6. Serve and enjoy.

Pancake Making Tips – Pancake Griddle

Griddles are convenient for making pancakes as the low sides make it easy to get the spatula under the pancakes for flipping. While most griddles cover two burners, there are several square and round versions available that cover only one burner that are appropriate for smaller families. Choose a non-stick finish for best results.
