Peanut Butter Cookies Recipe

Ingredients: Makes about 60

      • 1/2 cup margarine or butter
      • 1/4 cup brown sugar
      • 1 egg
      • 1 cup peanut butter
      • 1/2 tsp vanilla
      • 1 1/4 cups sifted whole-wheat or unbleached flour
      • 1/2 tsp baking soda
      • 1/2 tsp salt
      • 1 tbsp brewers’ yeast
      • 2 tsp wheat germ

    Method:

    1. Cream butter with sugar until very smooth. Beat in egg, peanut butter, and vanilla.
    2. Resift flour with soda, salt, and brewers’ yeast. Add and stir in wheat germ, distributing well.
    3. Combine flour mixture with peanut butter mixture and mix thoroughly.
    4. Pinch off small pieces of the dough, roll them into balls, and place on greased baking sheets.
    5. Flatten them with the tines of a fork or stamp with a fancy cookie mold and bake at 190°C for 16 minutes.
