Very well designed and thought out. While the knife looks really basic, there are several reasons why it’s one of the most popular knives in the world.First, the handle. The handle is made of plastic that is roughly textured (to me, it seems like a blend of glass fiber reinforced nylon and elastomers). The handle is fairly thick and chunky, but is extremely comfortable to hold. From my experience, the downfall with many knives is that with the classic knife’s grip (with index finger over the bolster), you can end up fatigued after repeated chopping, particularly with hard items like carrots and squash because most of the force is going through your index and middle finger. Because the Victorinox handle is chunky, the bolster is very supportive, and because the way the grip is shaped allows you to use more of your ring/pinky finger strength, the forces are more evenly distributed throughout the handle and you can use this knife for hours comfortably. Unlike with wooden handles, the texture also prevents the knife from slipping even when wet or slick with oil. My only gripe with the handle is that the textured finish can collect junk and require careful rinsing at times to bring back to a deep matte black finish.Secondly, the blade. The shape of the blade is pretty much “just about right” for most tasks. What I mean by this is that the belly is deep, deeper than most Japanese knives but not as deep as say, Kramer knives; it also has a very nice curve profile. This makes it easy to rock fast while still allowing you to make accurate straight cuts. The blade itself is also fairly thin at the spine and comes with a 18 degree (I believe) angle, which combined with the handle makes it relatively easy to chop through things like squash. Edge retention is very good (though clearly not as good as some of the higher end knives I’ve used); I have resharpened mine to 15 degrees and it doesn’t require frequent resharpening; when I do sharpen it, the edge comes back very easily. The blade also doesn’t corrode even when I do the unthinkable (putting it into a dishwasher).Overall, the best way to sum up this knife is that it feels extremely well thought out. It’s clear that the designers/engineers tried to address the best compromises for this knife, and selected the proper materials to hit this very low price point- this makes the knife an absolutely great value and one of the best examples of how a chef knife should be designed as a kitchen tool. You can always pay more for chef knives with more exotic blades and handles (or name brands…), but the Victorinox Fibrox is tough to beat from an actual useability and performance standpoint.
An Excellent Budget Knife. As far as budget knives go, you can’t go too wrong with this knife. Let’s talk about some of this knife’s attributes.The fit and finish is okay for the price. The spine is nicely rounded off (not the whole spine, the part of the spine nearer to the tip is left rough) and it comes with a nice glossy finish (don’t wash the knife with those green scrubby pads, they’ll scratch the blade). The choil isn’t polished.The handle is pretty utilitarian. It’s made of a hard, slightly grippy plastic. It sits pretty beefily in the hand, so this knife may be more uncomfortable to hold for smaller-handed individuals.The steel is not the best. It’s pretty soft, at 55 HRC, but the edge retention should be good enough to last a while. It does have that plasticky metal feel, though. If you tap the knife, it’ll sound like you’re hitting hard plastic.The knife has a nice profile for both rock chopping and tap chopping/thrust cutting.The blade geometry is really nice for the price. It’s a semi-workhorse grind. It comes pretty thin behind the edge so it’ll cut through things well. The food release is not terrible either.Although this doesn’t concern me since I sharpen my knives myself, the out of the box sharpness is not bad. It shaves hair and fillets printer paper easily OOTB.Overall, this is a great choice for a beater knife. It’ll take a lot to damage this knife. It won’t chip or bend in use and it will sharpen back up easily on stones. Good value, this knife’ll last years.
Sharp and durable. I’ve had this knife for several years and it’s still sharp. It makes cooking less of a chore. I can’t speak to the quality compared to other more expensive knives because I’ve never invested in one, but I think it’s a great value for the cost.

An excellent knife for 90% of kitchen cutting. It isn’t full tang, but it’s well-constructed to the point where I wouldn’t worry about the blade ever separating from the handle. I’ve got size XL hands and the handle is very comfortable, and my partner who has tiny hands can also use the knife without issue.Most importantly, the blade comes hair-shavingly sharp out of the box (I’ve ordered several for myself and family/friends as gifts). It’s not the hardest steel, which makes sense for a chef’s knife so it’s very easy to sharpen. I recommend a Spyderco Sharpmaker if you want to sharpen this knife (not a sharpening rod, despite what you’ve seen Gordon Ramsay do on TV).Overall, a chef’s knife doesn’t get better than this– at least not at this price point. The Victorinox Fibrox Pro 8-Inch Chef’s Knife is an affordable chef’s knife that is said to be a workhorse in the kitchen. It comes from the same manufacturer as Swiss Army Knives. To determine whether it is superior, we put it through its paces by slicing, mincing, dicing, and chopping vegetables. We also used it for less common tasks, such as cutting fresh bread (and stale bread for croutons) and slicing pizza into portions. We used it, washed it, and then used it again every day. Here’s what we concluded. 

The design is conventional for a chef’s knife, with a broad blade and a curved edge, making it ideal for rocking cuts. The top-rated chef’s knife has a slightly wider blade than usual, making it helpful in scooping up foods to transfer them to a dish or pot without being unwieldy. It is also an ideal size for crushing garlic cloves. 

The rough surface of the handle made it significantly less slippery when our hands were wet. Initially, we believed that the knife’s rough surface might make long cutting sessions uncomfortable, but as we worked, we completely forgot about the texture and continued without discomfort. The only disadvantage of the rough surface was that it tended to pick up small food particles with which it came into contact. The next time we picked it up after placing it on the counter after cutting bread cubes, there were often crumbs clinging to it. 

Overall, the aesthetics can be described as applicable. This knife would not be out of place in a commercial kitchen where aesthetics is less important. It is plain rather than ugly, so it would still be suitable for any home kitchen and blend in with other types of knives or knife sets. 

The Victorinox Fibrox Pro 8-Inch Chef’s Knife feels good in the hand and performs admirably, so it is a worthwhile investment. The lower price is due to the stamped blade, molded handle, and lack of embellishments, but let’s be honest: performance is all that matters when using a knife.

Inexpensive but cuts like a light saber, great ergonomics. I had heard a lot about Victorinox’s kitchen blades. I decided to give this a go as our paring knife has seen better days. The rubberized plastic handle over time has become sticky and gross. I got the green handled one for easy visibility and it was the cheapest of the colors.I have used this for a month or so now and out of the box it was very sharp. It continues to cut very well and I love the shape of the handle that fits my hand. For the price, you’re getting a lot of knife here. Highly recommended.

Best Paring Knives I’ve Ever Used. These are the best paring knives I’ve ever used. They are extremely sharp, rust resistant, and strong. The grip is perfect and they work for soft things like strawberries as well as hard veggies like sweet potatoes.
Very happy. I lost my tried and true utility knife which was serrated. Found this knife as a close replacement. Wow, it’s incredibly sharp and lightweight. Super sharp. These steak knives are incredible! They cut through a steak like butter. I have even used them to cut vegetables and they slice through them easily.
