Should I purchase a gluten-free bread machine? 

Let me begin by saying that you DO NOT need a bread machine to make delicious gluten-free bread. However, if you wish to use a bread machine, please read my article for tips on what to make and how to do so. 

Whether you bake gluten-free bread in an oven or a bread machine, there are numerous reasons to bake gluten-free bread at home: 

  • When you use the right ingredients, it’s easy to make delicious gluten-free bread;  
  • The results are far superior to any frozen gluten-free loaf you’d find in a grocery store;  
  • The slices are sized to make authentic sandwiches (without holes! ); 
  • It’s far more cost-effective in the long run to bake delicious gluten-free bread at home (how much money have you already wasted on gluten-free bread your family wouldn’t eat? I am done arguing) 


Gluten-free yeast breads do not handle two rises well at all. They need extra mixing time, and only one rise cycle. You need to make sure to get a bread machine with a gluten-free setting as it is programmed for this method

You don’t have to have a bread maker with a gluten free setting to bake gluten free bread. But it helps. If you have an older bread machine without a gluten free setting, make sure it’s totally clean from any gluten residue.

A great method for letting your yeast breads rise before baking is to turn on your oven to 200º F, then turn it off when it has reached temperature. Put your un-raised bread into the warmed oven with an oiled piece of parchment on top and a bowl of water in the oven with it, then let it rise according to directions.

Luckily, gluten-free bread is much tastier and cheaper if you make it at home. You can bake gluten-free bread in an oven, but if you regularly bake gluten-free bread, I highly recommend investing in a bread maker.

Apple cider vinegar or another acid lightens up the dough. You can add up to 4 Tbsp of acid for 500 g gluten-free flour. Don’t worry, you won’t be able to taste it afterwards. To lighten up a yeast dough even more, you can add a packet of baking powder or cream of tartar baking powder to 500 g flour.

Eggs are natural leaveners that help boost the rise and volume of bread. Eggs also add moisture, flavor, and protein to gluten-free bread recipes. If you select a gluten-free bread recipe that includes eggs, you have a better chance that the resulting bread will have good color, more volume, and softer texture.

Gluten-free flours are heavy and dense. If you add enough gluten-free flours to make a dry bread dough, you are going to have too much heaviness and denseness. The bread won’t rise.

I’ll start with the Zojirushi® Home Baker Virtuoso (it’s now called the Virtuoso Plus), as it has traditionally been the most highly regarded gluten free bread machine by most bakers (including myself). Its one drawback: the price.

Dense gluten free bread is typically the result of too little or no xanthan gum, or too litte moisture. Remember, there is no gluten in gf bread to give it structure, so it’s important that you use xanthan gum or an effective substitute to trap air bubbles and help produce a more airy bread. What is this?

Most gluten-free bread is made with yeast, as yeast works quite well with most gluten-free flours. When you’re making your own gluten-free bread with yeast, however, it’s important to note that not all baker’s yeasts are gluten-free.

Letting it rise high above the pan will let too much air into the dough and cause the loaf to collapse either in the oven or after removal. When we make our gluten free breads in the bakery, we seldom need to let our loaves proof for more than 20-25 minutes.

Gluten-free baking can often be dry so it is important to add moisture. This can be achieved by increasing the amount of vegan butter or oil, adding fruit such as applesauce or pumpkin puree or using brown sugar rather than white sugar.
