Tips: If you attempt to use a container larger than a pint, your jelly will likely not set correctly. Even though I have successfully made jelly in pint jars, I recommend sticking to 12-ounce or smaller containers. Moreover, more oversized items will not fit in the refrigerator once they are opened. 

Types of Jars 

There are two basic types of Mason jars: 

  • Regular mouth: The inner diameter of the mouth of these jars is 2-3/8 inches, and the outer diameter is 2-3/4 inches. 
  • Wide mouth: The inner and outer diameters of the mouth on these jars are 3 inches and 3-3/8 inches, respectively. These are ideal for pickling and canning fruits, vegetables, and meats because they are easier to fill.

Mason jars, also known as canning or fruit jars, are glass jars used to preserve food through home canning. It was named after the 1858 patent holder, American tinsmith John Landis Mason. The mouth of the jar is equipped with a screw thread to accept a metal ring or “band.” 

You may reuse Mason jars if they are not chipped, cracked, or otherwise compromised. Before reusing, sterilize used jars by washing them thoroughly in hot, soapy water. Always replace the lid, but reusing the ring is acceptable. 

To cut a long story short, age is irrelevant. If the jars are undamaged, they will function normally. Therefore, if you find 100-year-old jars in your grandfather’s barn, you can frequently reuse them. 

Mason jars can be used in the freezer, but you must take the following precautions: 

  • Instead of leaving 1/4 inch of headspace, as you would when canning, leave 1 to 2 inches at the top to allow for the food’s expansion as it freezes. Most Mason jars have a fill line for frozen foods underneath the ring-threaded top portion of the jar. 
  • Instead of tightening the lid as you usually would, leave it slightly loose. 
  • Either allow the food to cool before filling the jars or preheat the jars before filling them with hot liquid. Pouring a hot liquid into a cold jar may cause it to shatter. Before placing food in the freezer, it must be thoroughly cooled. 
  • Wide-mouth jars are recommended for freezing; if you must use regular-mouth jars with shoulders, leave 1 to 2 inches below the shoulders unfilled to allow the food to expand. 
  • Do not crowd them. Leave a small amount of space between the jars in the freezer, so they do not touch. 

Allow frozen food jars to defrost overnight in the refrigerator. Alternately, you can thaw them on your kitchen counter if you can monitor them and refrigerate them once they are softened. You can place the jar in a pan filled with tap or warm water to expedite the process. 

Caution: Neither hot water nor the microwave should ever be used to thaw frozen jars of food. 

What about glass containers that are not “Mason” jars? 

Use only jars made of tempered glass approved by the manufacturer for freezing when storing food in the freezer. 

Canned foods can be stored in plastic containers and jars in the freezer. Leave approximately 2 inches of headspace above the food in the container to allow for expansion. 

Some individuals use recycled plastic jars in the freezer, such as those used to store canned fruit and other foods, but I have never done so. In addition, you can place your food jars in the freezer without their lids and then screw on the lids once they have frozen. 

Note: This is the best time to recycle those old lids, as frozen food does not need to be sealed because it is preserved by freezing. The jars only need to be airtight to maintain the integrity of the flavors. 

If you have a broken or cracked food jar in the freezer, place it in a pan or the sink to thaw. When the glass has melted, remove it and put it in a bag or box before throwing it away. Broken glass should not be placed in the recycling bin, as hands and shards of separate glass recyclables could cause injury. 

Mayonnaise and salad dressing jars made of glass should not be used for canning. The only exception is if the jars are designed to fit a 2-piece canning jar lid so that a good seal can be achieved. In this instance, using them for jam, jelly, or any product that does not require additional processing would be acceptable.
