Factors to consider when choosing the best All American Pressure Canner 

Consider the following factors when shopping for a pressure canner: 

Capacity 

Since pressure canning is frequently performed in large quantities, the number of jars that can fit in a single canner is crucial. You must consider the diameter and height of the pressure canner’s capacity and choose one compatible with your stove and your frequency of food preservation. 

Using standard-sized mason jars, a 25-quart canner can accommodate approximately 19 pint-sized jars (16 oz.). This is determined by the diameter of the pot and its stacking capacity or whether a second rack can be used to store additional jars. 

In addition to the capacity of the canner, if your stove is small, a pot that is too wide may not fit or will heat slowly. Also, flat-top stoves (also known as smooth-top stoves) can be affected by a large canner, as the heat that is distributed along the entire pot will heat the area surrounding the burner. If the top of the stove is made of glass, you will need to consider the weight of the pot and the jars you intend to place in it to avoid cracking the surface. 

Material

Most pressure canners are composed of aluminum or stainless steel. Each possesses both advantages and disadvantages. 

Aluminum, the most common material for canning, is lightweight and an excellent heat conductor, so it will heat evenly. However, aluminum is not exceptionally durable and is easily dented by falls or blows. Since pressure canning requires a tight seal, you must avoid denting the lid not to compromise the seal. 

Stainless steel is significantly stronger than aluminum but also considerably heavier. It doesn’t conduct heat either, but if you have an induction stove, which only works with magnetic materials, it’s probably the best option. 

Nevertheless, some contemporary aluminum products, such as our Editor’s Pick, have flat steel bottoms to make them induction compatible. 

Gauge 

There are two methods for monitoring and regulating the pressure in a pressure canner. 

One is a traditional dial gauge. It measures the pot’s internal pressure, which can be adjusted by increasing or decreasing the burner’s heat. With increments of 1 or even 0.5 pounds per square inch, this method can provide more precise temperature control (psi). However, adjusting the burner knob to achieve the ideal pressure can be difficult and increases the likelihood of making mistakes. 

The other method involves placing a weighted gauge on top of the pot. This gauge regulates pressure and maintains a specific reading of 5, 10, or 15 psi. Although the user has less control over the pressure (there are only three options), precise and consistent pressure levels are maintained. 

This gauge begins to jiggle to release steam, and you must ensure that it jiggles and releases steam consistently. Note that you will only need to check this at the beginning of the process; the rest of the steps are relatively hands-off. 

The largest disadvantage of the weighted method is the large pressure increase gaps. If you live at least 1,000 feet above sea level, you will require higher pressure than average, but not necessarily five psi higher. Occasionally, an increase of 0.5 to 1 psi will suffice. The food will not be ruined by cooking it at a significantly higher pressure, but the flavor and texture may be altered; for example, vegetables may become mushy. 

Convenience 

Our emphasis was on life hacks and practical products, so their convenience was also essential. The question is whether each item will facilitate the completion of a task, the attainment of a goal, or the execution of an activity. Are they simple and easy to use? Can they make things simpler or more complicated? 

Price 

Do you consider the price of the item to be high or reasonable? What’s more important is whether the price is affordable. All American Canners are hit or miss, depending on their cost and effectiveness. Before you purchase something, consider whether it will be helpful and whether you will use it frequently enough to justify the cost. 

Water-bath versus pressure-canning 

Water bath and pressure canning are the two most common canning techniques. Despite the similarity of the processes, there are significant differences in the types of foods that can be preserved. 

The pot is almost filled with water in water bath canning, the jars are submerged, and the canning pot’s lid does not seal completely. As the water reaches its boiling point of 212 degrees, it sterilizes the jars and food. This method is adequate for acidic foods such as berries and tomatoes, as the acidity prevents the formation of harmful toxins. 

In contrast, pressure canners utilize steam, reaching temperatures of approximately 240 degrees Fahrenheit. Water is added to pressure canners about a quarter or a third of the way up. As the temperature rises and the pot’s lids seal shut, steam forms inside. Due to the additional heat from steam, pressure canning is effective for preserving low-acid foods, such as meat and fish, that require further assistance to prevent spoilage. 

Note that you can also use pressure canners for high-acid foods, although they are typically more expensive than water bath canners. Water bath canners are available for less than $50, whereas pressure canners cost over $200 and can go much higher. 

What are the optimal autoclave pressure and temperature settings for sterilization? 

The sterilizer has reached optimal temperature and pressure when the gauge reads “sterilization zone” in green. This zone’s temperature range is between 121 degrees Celsius (250 degrees Fahrenheit) and 259 degrees Fahrenheit (127 degrees Celsius). This zone has a pressure range between 15 and 22 PSI (pounds per square inch). It is best to consult an elevation chart for exact pressure readings, as they will vary depending on altitude.

How to use your All-American Sterilizer 

  • Place the sterilizer on a flat, heat-resistant surface near an electrical outlet before beginning (Electric). Or place a sterilizer on the source of heat (non-electric). 
  • Remove the sterilizer’s cover by rotating the wing nuts in a counterclockwise direction. Always loosen two opposite wing nuts simultaneously. 
  • Inside the sterilizer, remove the inner container and the inner container rack. 
  • Apply a thin layer of lubricant to the metal-to-metal seal, such as high vacuum grease or petroleum jelly. 
  • Fill the sterilizer with distilled water until the water line in the bottom of the sterilizer is reached. The water must be positioned directly on top of the heating element, NOT within the inner container. Next, place the inner container rack with the lip facing down inside the inner container. 
  • Place the items to be sterilized on the inner container rack while still outside the sterilizer. You may want to place the items in plastic bags intended for use in steam sterilizers. Arrange the things in the chamber so that steam can circulate freely during the sterilization cycle. 
  • Please verify that the water level inside the sterilizer is accurate, and then place the inner container with its contents inside it. 
  • VERY IMPORTANT – Position the air exhaust channel (inside the inner container) on the right side of the sterilizer. This is necessary so that when the unit’s cover is placed, the air exhaust tube can be guided into the air exhaust tube channel. 
  • Replace the sterilizer’s cover. Ensure that the index alignment arrow on the cover and the index line arrow on the side of the bottom are aligned. Ensure that the air exhaust tube is inserted into the channel for the air exhaust tube. 
  • Tighten the wing nuts to secure the cover. Always tighten two opposite wing nuts to ensure that the sterilizer’s cover fits evenly. Never tighten wing nuts with a wrench or other mechanical device. 
  • Connect the power supply cord to the appropriate 120V or 240V outlet. Then, place the on/off switch in the “on” position. The red pilot light needs to be lit (Electric). Or activate an outdoor heating source (non-electric). 
  • The control valve can be opened by bringing the lever to the upright position. It will take approximately 45 minutes for the sterilizer’s pressure to build up. Depending on the size of the sterilizer, this may vary. From the bottom of the unit, steam will be drawn upward through the air exhaust tube and out of the control valve. The control valve must continuously release steam for at least five minutes. Close the valve and allow the pressure to increase until the gauge reaches the “green” sterilization zone. Open the control valve again, enabling the chamber to vent for 3 to 5 minutes. The second venting is necessary to prevent sterilizer failure caused by trapped air in the chamber, which may prevent the steam from penetrating the items to be sterilized.
