High-altitude pressure cooking — solved. Modernist Cuisine says that the optimum pressure (really, temperature) for making stock is obtained at 1 bar or 15 psi. But that is relative to a sea level ambient pressure. To obtain the same temperature at my altitude (7000 ft., or 2133 m), I would need to run at 18.5 psi (an additional 0.5 psi per 1000 ft.), and no conventional pressure cooker with jiggle weights or spring settings is capable of doing that, at least that I am aware of.So following a suggestion by Douglas Baldwin, I bought the non-electric version (1925X) of the 27 liter All-American Sterilizer made by Wisconsin Aluminum Foundry, which is widely used by dentists, tattoo artists, and first aid stations for sterilizing instruments and dressings. Fortunately, it was just the right size to hold my All-Clad 7qt Pasta Pentola pot, so I could cook stock in a stainless steel pot, instead of using the aluminum container.But controlling the heat/pressure with my gas stove was a bit of a nuisance, and it required too much constant monitoring when I was making some oxtail consommé and trying to get some work done at the same time. (I should note that the manufacturer doesn’t recommend using them on glass or ceramic flattop stoves, as the weight might be too much and cause the glass to crack. And because they are aluminum, they can’t be used on an induction hob.)So the obvious thing to do was to adapt it to PID control, using one of my heavy-duty Sous Vide Magic controllers.I looked around for a hot plate that was big enough to heat up a lobster pot, but I didn’t find anything affordable. But hiding in a bottom drawer, unused, was a large electric griddle made by Oster, which was both big enough and strong enough to hold the sterilizer. And the griddle goes up to 400F, so there was plenty of heat output. Problem solved.So the next task was to modify the unit to get some of the Sous Vide Magic (SVM) probes inside it. I ordered two 1 m probes from Fresh Meals Solutions, and bought a 1/8″ NPT T-adapter and a couple of couplers of the right size to fit the pressure relief valve. At the same time, I removed the air-relief hose that goes inside the aluminum sterilization pan in order to assure that all of the air is replaced by steam, since I wouldn’t be using the pan and I didn’t want the hose to fall into the water.The two probes (one for the water/steam, and one to measure the temperature of the stock) just barely fit through the T-adapter and couplers. If I had it to do over again, I would cut the plugs off of the sensors, and try to fish the sensor wires though the side of the T, rather than through the top, and then solder them back on, but I didn’t think of that in time. So the pressure valve sticks out sideways. Oh, well — it works.In order to make the probes pressure proof, I drilled a hole in a brass cap for the T-adapter coupling, fished the sensors through it, and then applied some epoxy to seal it. The first epoxy I used was some high temperature metal sealing stuff, but it was almost impossible to get out of the tube, and I didn’t think it would be steam tight. I later put some J-B Weld epoxy on it, with decent but not perfect results — there was a little steam leakage. So I put on some more, and that helped, but it still wasn’t perfect, although it was good enough to get up to 20 psi. One final application covered everything nicely, and prevented any steam leakage.The first couple of times I tried the unit there was some steam leakage from the metal-to-metal seal. The solution was to wipe the lip of the container with some olive oil to act as a lubricant, and then be careful to make sure the lid is parallel to the base before tightening the knobs.Once the griddle came up to temperature, I could adjust the SVM set point. I finally determined that 120.0°C was the magic setting for my purpose, and it then held at 18.5 psi for 30 minutes. If you are at a different altitude, you will need a different temperature. Within about five minutes from the water probe coming up the temperature, the second probe that was immersed in a measuring cup full of water had come up to about 119°C, so that worked very nicely.Now, just a word of caution. My modifications surely voided the manufacturers warranty — oh, well. And using the product for food preparation probably violates the FDA’s rules as well, because we consumers are thought to be too stupid to be able to read a gauge — we have to have jiggle weights, or something. Oh, well, squared!

Excellent sterilizer, excellent customer service. My first sterilizer shipped very quickly but arrived damaged in transport. I contacted the company and they VERY quickly sent a replacement. Excellent communication. The replacement sterilizer arrived in perfect condition. Very happy with my purchase!
Don’t buy this. Total waste of money. At least now, the discrimination says it is not a canned. I bought this during our move so went beyond the date of return before opening it and realizing, I have been ripped off! This is a lot of money to throw away. I hope the sellers, reap the karma for stealing from people.
Totally worth the expense. Came with broken release valve, Amazon handled it very quickly. I was able to get a replacement valve for about 40 bucks and everything else is great.Ran it for 4 hours last night at 17-20 psi, not a single problem! Held a few psi overnight.Soooo much better than regular pressure cookers (for mycology purposes) I wish I had bought one sooner, totally worth it! Would have saved me hundreds of dollars of grain and spawn bags and days of wasted time on failed sterilization with my old cooker/canner.If you are considering the purchase… Stop, just do it. Very happy with my ALL AMERICAN. I’m extremely happy with my STERILIZER. I knew exactly what I was purchasing. I called the manufacturer and ordered a jiggler separately so I could convert it to a pressure canner. Now I can sterilize media and can food.The seller was prompt and very easy to work with. Very professional, they contacted me via email the next day. And later by phone by my request. Its very unfortunate that people leave a negative review for such a high quality product. Especially when its user error.I set it on my big burner for a pressure test . No fiddling around, I just slowly tighted the lid while keeping the edge even. Once all the knobs where tight , I hit the gas. Maybe a tinsy bit on the hot side. I held 17 psi for half an hour. I haven’t installed my jiggler yet.. I been waiting years to buy this. If you don’t know you can buy a pressure gauge or jiggler valve , nevermind.

Great for Making Soup. When I was married 45 years ago, we found a canner that was almost exactly like this sterilizer at a yard sale. We used if for forty years and then noticed that metal would come off when it was scrubbed. Regretfully, we had to discard it. I was so pleased when I found this. It is just like what we had all of those years ago. Now we can make big batches of chili and soup so that we can share it with friends and family. My husband has never been happier with a Christmas present. I do wish it had directions for cooking and canning, but it was sold as a sterilizer so I got what I paid for.
The Sterilizer seemed to be in perfect condition, other than the pressure/temperature gauge, which had a warped internal gauge. We sampled the equipment while following all of the instructions given and once it got to a certain pressure/temperature it stopped climbing. After some time at the same pressure the release valve, which was closed, started to vent. The red light then turned off. We decided to vent the sterilizer by opening the steam valve because we knew something was not right and once the steam stopped being released the pressure was still at the same reading. We then tapped the gauge and it fell down to zero. It was at this point that we realized the warped internal gauge was not giving an accurate reading. With a replacement pressure gauge, we have no doubt the machine will operate as specified.
The product was excellent but I bought by mistake. I want a pressure canner fro canning food. I received product quickly customer service responded quickly when I realized my mistake. Overall I would give a 4.8 out of 5 and only because I dont think the item should have come up when I searched for ‘Pressure Canners’…live and learn to read all information provided before ordering…my bad! 😉

Handy Little Book. I bought this book by mistake not realizing All American is a brand. I had purchased a presto pressure canner and figured I needed a book to go along with it seeing as I had never pressure canned before so I bought this one and boy I’m glad I did! I was very wary of pressure canning and this book put me right at ease. It has a great introduction on what you can and can’t put in your canner, labeling and storage as well as a lot of great information a first time pressure canner should know. After realizing that I purchased the wrong book. I purchased the Presto pressure canning book. To my surprise when I look at the book it has exact same recipes as the All American book. EXACTLY THE SAME! What makes this book better is the great introduction. I will be returning the presto pressure canner book and keeping the All American book.
I haven’t used any of the recipes yet, but I have gone through the book and marked the ones I want to try. From what I’ve read in the book, the recipes seem to be the correct proportions. The author writes in a simple, matter of fact way – just like she’s standing right there just talking to you. I like that! And I do like one thing she said on page 13, “put safety first and keep your common-sense wits about you”. Even though I’ve been canning a while now, I got this book for new recipe ideas or tweaks, and this book gave me several.
Fantastic. I have purchased and looked through many pressure cooking cookbooks and this is by far the best. I got it because I follow the author on FB and have been impressed with her techniques and recipes. The techniques are easy to follow and take the fear factor out of pressure cooking and preserving. The recipes are great, neither too bland and old fashioned but also not trying too hard. Good solid recipes almost everyone will like with clear instructions. I got it based upon past experience with the author and it is even better than I thought.
Needs editing. Many mistakes. Many mistakes in book. It appears data was left out or incomplete/unclear instructions. But I give it a 4 because of the unique recipes not found in other canning books (I own about 50).
What I needed. Haven’t used it yet but I’m sure it will be fine.
Love this canner. I absolutely love this canner. I was afraid of it at first but after the first time I am in love.
The last cookbook you will need. (Canning or not). Probably the last recipes book you will ever need. Great basics with others more adventurous. EVEN IF YOU DONT CAN, the recipes are simple and can be prepared and served. Knowing how to can that recipe is a bonus.This is seriously the only cook book you will ever need.
Yields are off, headspace worries, otherwise they look like tasty meals. Research-based? Hard to say. Certainly a lot of recipes, but no errata, and it appears to be self-published. So far I have tried two recipes and both came up VERY short on liquid. I’ve done a LOT of boiling-water canning over the past few years, and I’m very good at getting the right headspace – it’s also is essential because leaving too much air in the can is not good for the food you’re trying to preserve. At this point I’ll probably use the book more for inspiration, while cross-referencing with the USDA’s canning manual (freely available), my pressure canner’s manual (yep, it’s an All American 921), and possibly whatever other resources I can find that include fully-tested, research-based recipes…at least until I can get more comfortable with pressure-canning. As for this book, I’m giving it a three because it has some promise, but BUYER BEWARE: you should have a good handle on canning before diving in to this publication, and probably double the liquid component of any meal you want to can out of this book… (so far that seems to be how short I’m coming up, and I’m pretty fanatic about my measurements – I will even weigh ingredients to ensure a proper distribution between jars! sigh…)
The variety of meals that can be made are astonishing. From soups to canning meals with meat are very easy to make.

This is an excellent book for any pressure canner. My only beef is that there don’t seem to be recipes with what to do with most of the items after they are canned. You can find other books or websites that can help you with that, but it would have been great if the author had added suggestions about what she does with the canned items in her pantry.

This is the best pressure-cooking cookbook I have ever purchased or perused. Following the author on Facebook and being impressed by her techniques and recipes led me to buy this book. The methods are straightforward and eliminate the fear associated with pressure cooking and food preservation.  

The recipes are excellent, neither bland nor outmoded, nor do they try too hard. It is a solid recipe with clear instructions that nearly everyone will enjoy. I purchased it based on the author’s previous work, which is even better than I anticipated.

Also, flat-top stoves (also known as smooth-top stoves) can be affected by a large canner, as the heat that is distributed along the entire pot will heat the area surrounding the burner. If the top of the stove is made of glass, you will need to consider the weight of the pot and the jars you intend to place in it to avoid cracking the surface. 


Most pressure canners are composed of aluminum or stainless steel. Each possesses both advantages and disadvantages. 

Aluminum, the most common material for canning, is lightweight and an excellent heat conductor, so it will heat evenly. There are two methods for monitoring and regulating the pressure in a pressure canner. 

One is a traditional dial gauge. It measures the pot’s internal pressure, which can be adjusted by increasing or decreasing the burner’s heat. With increments of 1 or even 0.5 pounds per square inch, this method can provide more precise temperature control (psi). However, adjusting the burner knob to achieve the ideal pressure can be difficult and increases the likelihood of making mistakes. 

The other method involves placing a weighted gauge on top of the pot. This gauge regulates pressure and maintains a specific reading of 5, 10, or 15 psi. Although the user has less control over the pressure (there are only three options), precise and consistent pressure levels are maintained. 

This gauge begins to jiggle to release steam, and you must ensure that it jiggles and releases steam consistently. Note that you will only need to check this at the beginning of the process; the rest of the steps are relatively hands-off. 

The largest disadvantage of the weighted method is the large pressure increase gaps. If you live at least 1,000 feet above sea level, you will require higher pressure than average, but not necessarily five psi higher. Occasionally, an increase of 0.5 to 1 psi will suffice. The food will not be ruined by cooking it at a significantly higher pressure, but the flavor and texture may be altered; for example, vegetables may become mushy.

Water-bath versus pressure-canning 

Water bath and pressure canning are the two most common canning techniques. Despite the similarity of the processes, there are significant differences in the types of foods that can be preserved. 

The pot is almost filled with water in water bath canning, the jars are submerged, and the canning pot’s lid does not seal completely. As the water reaches its boiling point of 212 degrees, it sterilizes the jars and food. This method is adequate for acidic foods such as berries and tomatoes, as the acidity prevents the formation of harmful toxins. 

In contrast, pressure canners utilize steam, reaching temperatures of approximately 240 degrees Fahrenheit. Water is added to pressure canners about a quarter or a third of the way up. As the temperature rises and the pot’s lids seal shut, steam forms inside. Due to the additional heat from steam, pressure canning is effective for preserving low-acid foods, such as meat and fish, that require further assistance to prevent spoilage. 

Note that you can also use pressure canners for high-acid foods, although they are typically more expensive than water bath canners. Water bath canners are available for less than $50, whereas pressure canners cost over $200 and can go much higher. 

What are the optimal autoclave pressure and temperature settings for sterilization? 

The sterilizer has reached optimal temperature and pressure when the gauge reads “sterilization zone” in green. This zone’s temperature range is between 121 degrees Celsius (250 degrees Fahrenheit) and 259 degrees Fahrenheit (127 degrees Celsius). This zone has a pressure range between 15 and 22 PSI (pounds per square inch). It is best to consult an elevation chart for exact pressure readings, as they will vary depending on altitude.

How to use your All-American Sterilizer 

  • Place the sterilizer on a flat, heat-resistant surface near an electrical outlet before beginning (Electric). Or place a sterilizer on the source of heat (non-electric). 
  • Remove the sterilizer’s cover by rotating the wing nuts in a counterclockwise direction. Always loosen two opposite wing nuts simultaneously. 
  • Inside the sterilizer, remove the inner container and the inner container rack. 
  • Apply a thin layer of lubricant to the metal-to-metal seal, such as high vacuum grease or petroleum jelly. 
  • Fill the sterilizer with distilled water until the water line in the bottom of the sterilizer is reached. The water must be positioned directly on top of the heating element, NOT within the inner container. Next, place the inner container rack with the lip facing down inside the inner container. 
  • Place the items to be sterilized on the inner container rack while still outside the sterilizer. You may want to place the items in plastic bags intended for use in steam sterilizers. Arrange the things in the chamber so that steam can circulate freely during the sterilization cycle. 
  • Please verify that the water level inside the sterilizer is accurate, and then place the inner container with its contents inside it. 
  • VERY IMPORTANT – Position the air exhaust channel (inside the inner container) on the right side of the sterilizer. This is necessary so that when the unit’s cover is placed, the air exhaust tube can be guided into the air exhaust tube channel. 
  • Replace the sterilizer’s cover. Ensure that the index alignment arrow on the cover and the index line arrow on the side of the bottom are aligned. Ensure that the air exhaust tube is inserted into the channel for the air exhaust tube. 
  • Tighten the wing nuts to secure the cover. Always tighten two opposite wing nuts to ensure that the sterilizer’s cover fits evenly. Never tighten wing nuts with a wrench or other mechanical device. 
  • Connect the power supply cord to the appropriate 120V or 240V outlet. Then, place the on/off switch in the “on” position. The red pilot light needs to be lit (Electric). Or activate an outdoor heating source (non-electric). 
  • The control valve can be opened by bringing the lever to the upright position. It will take approximately 45 minutes for the sterilizer’s pressure to build up. Depending on the size of the sterilizer, this may vary. From the bottom of the unit, steam will be drawn upward through the air exhaust tube and out of the control valve. The control valve must continuously release steam for at least five minutes. Close the valve and allow the pressure to increase until the gauge reaches the “green” sterilization zone. Open the control valve again, enabling the chamber to vent for 3 to 5 minutes. The second venting is necessary to prevent sterilizer failure caused by trapped air in the chamber, which may prevent the steam from penetrating the items to be sterilized. 
  • After the chamber has been adequately ventilated, the sterilization process commences. When the gauge reaches the green zone, start timing the sterilization cycle. It is advised to run a sterilization cycle for at least 35 minutes at a minimum temperature of 250 degrees Fahrenheit (121 degrees Celsius). Use the timer on the unit’s left side (50x and 75x only). Monitor the gauge throughout the sterilization cycle. 
  • At the conclusion of the sterilization cycle, open the control valve and turn the toggle switch to “off” (Electric) or turn off the external heat source (non-electric). The valve will be hot. Always wear heat-resistant gloves to open the valve to prevent injury. Continue to monitor the gauge until 0 PSI is reached. Never attempt to open the sterilizer before the indicator reads zero. 
  • Loosen the wing nuts with the pressure gauge at zero. When loosening the wing nuts, it may be necessary to wear heat-resistant gloves. Take off the cover. Remember to tilt the lid away from you to avoid injury from any remaining steam. 
  • Remove the container’s interior. If the sterilizer is not used again immediately, empty all the water from the unit and dry the interior thoroughly. Leave the control valve open to allow air to circulate through the sterilizer during storage.
