The All-American Pressure Canner is a fantastic product, and I felt compelled to write about it here. Remember that you get what you pay for before worrying about the price. No exceptions can be made for this one.

Everyone has their own standards, but the best comes at a price for me. I only want to make a one-time investment in things I will use for the rest of my life. In addition, for something that I consider crucial to my survival or way of life.

While I still have and use my original Presto pressure canner, I also recently purchased a second, more powerful model from All American.

About All American Pressure Canner

You want a pressure canner. You may have had one in the past or decided to try pressure canning because you have heard that out-of-season seasonal vegetables are delicious.

Possibly what has been holding you back is the thought of having to replace rubber gaskets as they wear out. Have you ever questioned whether the rubber gaskets would fail at the most inconvenient time? Can you see the jars in the canner as steam escapes from under the lid?

Suppose you are interested in purchasing a high-quality Pressure Cooker/Canner whose rubber gaskets do not need to be replaced over time. In that case, the All-American Pressure Cooker/Canner may be precisely what you need.

The All-American Pressure Cooker/Canner has a unique “metal-to-metal” seal, which means you will never again need to replace a rubber O-ring unless you want to be a glutton.

Since 1930, the Wisconsin Aluminum Foundry manufactured the All-American Pressure Cooker/Canner. The quality of their Pressure Cookers/Canners demonstrates this.

Features Of The All-American Pressure Canner/Cooker

The All-American Pressure Canner/Cooker has several features that make it ideal for people who want to preserve food for out-of-season consumption.

  • Unique “metal-to-metal” sealing system that provides a steam-tight seal.
  • 21 ½ quart capacity Durable hand cast aluminum vessel
  • A straightforward pressure gauge.
  • Simple-care surfaces
  • Positive action wing nuts for simple opening and closing
  • An Automatic Overpressure Release
  • Solid, durable and elegance

What We Like

Online reviewers give the All-American Pressure Canner/Cooker very high marks. Many individuals commented on how well-built and solid the structure was. Several reviewers remarked favorably on the pressure canner’s handles.

When people mention handles, an almost inconsequential component, you know they must be perfect. Many reviewers found the pressure gauge on the Presto Pressure Canner/Cooker to help check the pressure. Numerous pressure canners on the market lack an integrated pressure gauge.

The pressure gauge on the All-American Pressure Canner/Cooker provides users with additional assurance regarding its safety. The absence of a gasket is perhaps the feature we appreciate most about the all-American pressure canner/cooker. The unique “metal-to-metal” sealing system of American pressure canners/cookers eliminates the need to replace rubber gaskets.

In the long run, the cost of replacement gaskets for more expensive pressure canners/cookers will likely exceed the small amount of money you could spend now on the All-American Pressure Canner/Cooker.

The sturdy construction of the All-American Pressure Canner/Cooker allows it to retain heat well, even after the heat has been turned off. Some reviewers found this reassuring, as it spoke to the quality of the pressure canners/cookers construction.

With a capacity of 21 12 quarts, the all-American pressure Canner/cooker will be able to meet most of your pressure canning needs. Popular among reviewers was the notion that the All-American Pressure Canner/Cooker performs as advertised. The reviewers were relieved and encouraged to have purchased a high-quality pressure canner.

The All American 921 Pressure Cooker is exclusively designed for canning and can fit over seven quart-sized jars or nineteen pint-sized jars within its massive 21-and-a-half-quart container.

This canner is constructed as a tank. If you want a traditional pressure cooker and can afford the best on the planet, the All-American pressure canner is for you.

The All American 921 was hand-cast from aluminum with the highest level of durability in mind. Externally, it has a beautiful satin or glossy lamination. This canning pressure cooker relies on metal-to-metal sealing with high-gauge screws rather than gaskets or rubber to maintain internal pressure.

In addition to its variable settings of 5, 10, and 15 psi, the 921-pressure cooker has a gear-driven steam pressure gauge and an automatic pressure release regulator. This pressure canner is entirely made in the United States and adheres to all industry standards.

Due to its metal-to-metal seal, the All American 921 is unlike any other canner/cooker. This feature eliminates the need for a lid gasket while making the cooker and canner combination incredibly accurate and effective.

The gauges are easy to read, but you won’t need to because the 921 is designed for simple operation. It automatically reduces the pressure whenever it becomes too high and has pressure level settings of 5 psi, 10 psi, and 15 psi, or 135.8, 170.3, and 204.7k Pa, respectively.

The All American 921 is constructed of heavy-duty cast aluminum for rapid cooking and canning. It also utilizes a safety control valve, an overpressure plug, and a stay-cool Bakelite top handle to ensure that the pressure cooker/canner provides the safest, most enjoyable, and most profitable results possible.

Every All-American canner is constructed using the same design and high-quality materials. The “metal to metal” seal, which prevents the need for a rubber gasket, is one of their most prominent characteristics. This means that no maintenance or replacements are required, as the metal seal will last the lifetime of the pot. Note, however, that the edges of the pot and lid must be handled with care so as not to disrupt the seal. Users should avoid hitting the edges with metal utensils and avoiding dropping them.

All the brand’s canners employ the weighted gauge method for maximum precision. A single weight with three different sides (5, 10, and 15 psi) and two racks (one for the bottom and the other for the second layer of jars) are included, as well as a recipe book. It is equipped with a dial gauge but cannot be used to adjust the pressure.

Because they are made entirely of aluminum, All American’s products cannot be used with induction cooktops. This is a common problem with products of this quality and size. They are also not recommended for glass-top stoves due to their weight; this model weighs approximately 18 pounds when empty.

Lastly, the brand’s warranty is concise at only one year, but you should never need it because All American canners are known for their durability.

As stated on our list of the best overall pressure canners, the All-American brand is among the top options for pressure canners. The company manufactures the same model in capacities ranging from 10.5 to 41 quarts. If you want to make large batches and fill your pantry as quickly as possible, the 41-quart model is our recommendation.

Like the 25-quart model, the 41-quart All American 941 features a metal-to-metal seal, a weighted gauge that can be switched between 5, 10, and 15 psi, and high-grade cast aluminum manufactured in the United States. The 941 is significantly larger and can accommodate 32 pint-sized jars simultaneously.

Depending on your stove, this size may also be disadvantageous. All American does not recommend using any of its products on a glass-top stove; this one weighs 33 pounds when empty and easily exceeds 50 pounds when fully loaded.

Lastly, this model is quite pricey, typically costing around $500, although it is occasionally available for about $50 less. (As a side note, it has also been challenging to find the general stock in 2020 and 2021.)

Key Features
  • Ideal for doctors, dentists, first aid stations, hospitals, and laboratories for dependable sterilization | Product is not a pressure canner

Factors to consider when choosing the best All American Pressure Canner

Consider the following factors when shopping for a pressure canner:

Capacity

Since pressure canning is frequently performed in large quantities, the number of jars that can fit in a single canner is crucial. You must consider the diameter and height of the pressure canner’s capacity and choose one compatible with your stove and your frequency of food preservation.

Using standard-sized mason jars, a 25-quart canner can accommodate approximately 19 pint-sized jars (16 oz.). This is determined by the diameter of the pot and its stacking capacity or whether a second rack can be used to store additional jars.

In addition to the capacity of the canner, if your stove is small, a pot that is too wide may not fit or will heat slowly. Also, flat-top stoves (also known as smooth-top stoves) can be affected by a large canner, as the heat that is distributed along the entire pot will heat the area surrounding the burner. If the top of the stove is made of glass, you will need to consider the weight of the pot and the jars you intend to place in it to avoid cracking the surface.

Material

Most pressure canners are composed of aluminum or stainless steel. Each possesses both advantages and disadvantages.

Aluminum, the most common material for canning, is lightweight and an excellent heat conductor, so it will heat evenly. However, aluminum is not exceptionally durable and is easily dented by falls or blows. Since pressure canning requires a tight seal, you must avoid denting the lid not to compromise the seal.

Stainless steel is significantly stronger than aluminum but also considerably heavier. It doesn’t conduct heat either, but if you have an induction stove, which only works with magnetic materials, it’s probably the best option.

Nevertheless, some contemporary aluminum products, such as our Editor’s Pick, have flat steel bottoms to make them induction compatible.

Gauge

There are two methods for monitoring and regulating the pressure in a pressure canner.

One is a traditional dial gauge. It measures the pot’s internal pressure, which can be adjusted by increasing or decreasing the burner’s heat. With increments of 1 or even 0.5 pounds per square inch, this method can provide more precise temperature control (psi). However, adjusting the burner knob to achieve the ideal pressure can be difficult and increases the likelihood of making mistakes.

The other method involves placing a weighted gauge on top of the pot. This gauge regulates pressure and maintains a specific reading of 5, 10, or 15 psi. Although the user has less control over the pressure (there are only three options), precise and consistent pressure levels are maintained.

This gauge begins to jiggle to release steam, and you must ensure that it jiggles and releases steam consistently. Note that you will only need to check this at the beginning of the process; the rest of the steps are relatively hands-off.

The largest disadvantage of the weighted method is the large pressure increase gaps. If you live at least 1,000 feet above sea level, you will require higher pressure than average, but not necessarily five psi higher. Occasionally, an increase of 0.5 to 1 psi will suffice. The food will not be ruined by cooking it at a significantly higher pressure, but the flavor and texture may be altered; for example, vegetables may become mushy.

Convenience

Our emphasis was on life hacks and practical products, so their convenience was also essential. The question is whether each item will facilitate the completion of a task, the attainment of a goal, or the execution of an activity. Are they simple and easy to use? Can they make things simpler or more complicated?

Price

Do you consider the price of the item to be high or reasonable? What’s more important is whether the price is affordable. All American Canners are hit or miss, depending on their cost and effectiveness. Before you purchase something, consider whether it will be helpful and whether you will use it frequently enough to justify the cost.

Water-bath versus pressure-canning

Water bath and pressure canning are the two most common canning techniques. Despite the similarity of the processes, there are significant differences in the types of foods that can be preserved.

The pot is almost filled with water in water bath canning, the jars are submerged, and the canning pot’s lid does not seal completely. As the water reaches its boiling point of 212 degrees, it sterilizes the jars and food. This method is adequate for acidic foods such as berries and tomatoes, as the acidity prevents the formation of harmful toxins.

In contrast, pressure canners utilize steam, reaching temperatures of approximately 240 degrees Fahrenheit. Water is added to pressure canners about a quarter or a third of the way up. As the temperature rises and the pot’s lids seal shut, steam forms inside. Due to the additional heat from steam, pressure canning is effective for preserving low-acid foods, such as meat and fish, that require further assistance to prevent spoilage.

Note that you can also use pressure canners for high-acid foods, although they are typically more expensive than water bath canners. Water bath canners are available for less than $50, whereas pressure canners cost over $200 and can go much higher.

What are the optimal autoclave pressure and temperature settings for sterilization?

The sterilizer has reached optimal temperature and pressure when the gauge reads “sterilization zone” in green. This zone’s temperature range is between 121 degrees Celsius (250 degrees Fahrenheit) and 259 degrees Fahrenheit (127 degrees Celsius). This zone has a pressure range between 15 and 22 PSI (pounds per square inch). It is best to consult an elevation chart for exact pressure readings, as they will vary depending on altitude.

How to use your All-American Sterilizer

  • Place the sterilizer on a flat, heat-resistant surface near an electrical outlet before beginning (Electric). Or place a sterilizer on the source of heat (non-electric).
  • Remove the sterilizer’s cover by rotating the wing nuts in a counterclockwise direction. Always loosen two opposite wing nuts simultaneously.
  • Inside the sterilizer, remove the inner container and the inner container rack.
  • Apply a thin layer of lubricant to the metal-to-metal seal, such as high vacuum grease or petroleum jelly.
  • Fill the sterilizer with distilled water until the water line in the bottom of the sterilizer is reached. The water must be positioned directly on top of the heating element, NOT within the inner container. Next, place the inner container rack with the lip facing down inside the inner container.
  • Place the items to be sterilized on the inner container rack while still outside the sterilizer. You may want to place the items in plastic bags intended for use in steam sterilizers. Arrange the things in the chamber so that steam can circulate freely during the sterilization cycle.
  • Please verify that the water level inside the sterilizer is accurate, and then place the inner container with its contents inside it.
  • VERY IMPORTANT – Position the air exhaust channel (inside the inner container) on the right side of the sterilizer. This is necessary so that when the unit’s cover is placed, the air exhaust tube can be guided into the air exhaust tube channel.
  • Replace the sterilizer’s cover. Ensure that the index alignment arrow on the cover and the index line arrow on the side of the bottom are aligned. Ensure that the air exhaust tube is inserted into the channel for the air exhaust tube.
  • Tighten the wing nuts to secure the cover. Always tighten two opposite wing nuts to ensure that the sterilizer’s cover fits evenly. Never tighten wing nuts with a wrench or other mechanical device.
  • Connect the power supply cord to the appropriate 120V or 240V outlet. Then, place the on/off switch in the “on” position. The red pilot light needs to be lit (Electric). Or activate an outdoor heating source (non-electric).
  • The control valve can be opened by bringing the lever to the upright position. It will take approximately 45 minutes for the sterilizer’s pressure to build up. Depending on the size of the sterilizer, this may vary. From the bottom of the unit, steam will be drawn upward through the air exhaust tube and out of the control valve. The control valve must continuously release steam for at least five minutes. Close the valve and allow the pressure to increase until the gauge reaches the “green” sterilization zone. Open the control valve again, enabling the chamber to vent for 3 to 5 minutes. The second venting is necessary to prevent sterilizer failure caused by trapped air in the chamber, which may prevent the steam from penetrating the items to be sterilized.
  • After the chamber has been adequately ventilated, the sterilization process commences. When the gauge reaches the green zone, start timing the sterilization cycle. It is advised to run a sterilization cycle for at least 35 minutes at a minimum temperature of 250 degrees Fahrenheit (121 degrees Celsius). Use the timer on the unit’s left side (50x and 75x only). Monitor the gauge throughout the sterilization cycle.
  • At the conclusion of the sterilization cycle, open the control valve and turn the toggle switch to “off” (Electric) or turn off the external heat source (non-electric). The valve will be hot. Always wear heat-resistant gloves to open the valve to prevent injury. Continue to monitor the gauge until 0 PSI is reached. Never attempt to open the sterilizer before the indicator reads zero.
  • Loosen the wing nuts with the pressure gauge at zero. When loosening the wing nuts, it may be necessary to wear heat-resistant gloves. Take off the cover. Remember to tilt the lid away from you to avoid injury from any remaining steam.
  • Remove the container’s interior. If the sterilizer is not used again immediately, empty all the water from the unit and dry the interior thoroughly. Leave the control valve open to allow air to circulate through the sterilizer during storage.

Best All-American Pressure Canner for every purpose - FAQs

When items are placed in an autoclave, they are exposed to steam at a high temperature for about 20 minutes. The steam temperature is approximately 270 degrees Fahrenheit. The pressurized, heated water within the chamber produces hot steam. Steam’s high temperature kills germs, spores, and bacteria that soap and detergents cannot remove.

After each use, your sterilizer should be thoroughly cleaned. Rinse thoroughly with water and fill the sterilizer with white vinegar to the standard operating level. Allow standing for a few minutes. Rinse thoroughly with water after soaking in vinegar. The vinegar process must be repeated several times to remove lime and mineral deposits that can lead to calcification. Before storing the sterilizer, it must be thoroughly dried. Your sterilizer should be kept in a dry, clean location. Remember never to turn on your sterilizer while it is filled with cleaning solution.

Due to the variety of dissolved minerals and salts it contains, tap water can cause damage to your sterilizer. In some regions, the mineral content of the water can be high. The minerals and salts can lead to a buildup that impairs the sterilizer’s performance. For these reasons, only distilled water should be used in your sterilizer.
